A bit earthy and a bit spicy, Zucca carries flavours that remind us of great tequila, so it’s only logical to pair the two together in this Margarita riff. The Rabarbaro balances the Jalapeño, both playing beautifully off the mix of Reposado Tequila, Lime. Juice and Agave Syrup.
In the bottom of a shaker (without ice) muddle 3 x quarter-inch (half-cm) slices of Jalapeño. Add ice and the rest of the ingredients, then shake and double strain into a rocks glass.
