A bit earthy and a little bit spicy, Rabarbaro (which is basically a dried Rhurbard Amaro) is a perfect edition for a Margarita riff. Similar in flavour to the Tequila itself, the Rabarbaro balances the Jalapeño in this variation while mixing beautifully with the expected Reposado Tequila, Lime. Juice and Agave Syrup.

Ingredients

2 oz. 60ml Reposado Tequila
1 oz. 30ml Lime Juice
0.75 oz. 23ml Rabarbaro (Zucca)
0.25 oz. 8ml Agave Syrup
3 slices 3 slices Jalapeño

Instructions

In the bottom of a shaker (without ice) muddle 3 x quarter-inch (half-cm) slices of Jalapeño. Add ice and the rest of the ingredients, then shake and double strain into a rocks glass.
