Ube Ume

Created by Dylan Shuey + Cedric Vongerichten at Wayan NYC, the Ube Ume is a riff on a Rum Sour. As well as the Rum, Lemon Juice, Simple Syrup and Aquafaba that you would expect, this drink also has Sake and the beautiful colour of Ume Plum Liqueur & Ube extract.

Ingredients

  • 0.75 oz. 23ml White Rum
  • 0.25 oz. 8ml Sake (Junmai Daiginjo)
  • 0.25 oz. 8ml Plum Liqueur (UME)
  • 0.75 oz. 23ml Aquafaba
  • 0.5 oz. 15ml Lemon Juice
  • 0.5 oz. 15ml Simple Syrup
  • 1 drop 1 drop Ube Extract
Display: oz. ml.

Instructions

Shaken hard all ingredients in an ice-filled shaker before fine straining into a Nick & Nora glass.

Garnish

A few drops of Peychard’s Bitters
