Created by Dylan Shuey + Cedric Vongerichten at Wayan NYC, the Ube Ume is a riff on a Rum Sour. As well as the Rum, Lemon Juice, Simple Syrup and Aquafaba that you would expect, this drink also has Sake and the beautiful colour of Ume Plum Liqueur & Ube extract.
Shaken hard all ingredients in an ice-filled shaker before fine straining into a Nick & Nora glass.
