Named for the bluegrass that grows in Bourbon country, the Bluegrass cocktail was created by Hayden Lambert at Merchant Hotel in Belfast. Embracing the Cucumber, Bourbon and the bittersweet orange of Aperol, the drink also has Simple Syrup as well as both Orange and Angostura Bitters.
Muddle cucumber in the base of a shaker, then add all other ingredients. Shake and fine strain into a chilled cocktail glass
