Apium

Main Spirit Mezcal
Difficulty Easy
Technique Shaken

Playing with Mezcal’s savoury and salty side, Apium is a Margarita riffĀ from the book Mezcal by Emma Janzen. The savoury notes of celery bitters add to the smoke of the Mezcal for a tantalisingly seasonal take on the original.

“To her mind, nothing broke up the tedium of a long shift better than those moments when the brand reps swaggered in. Although she was familiar with the expression, ‘donā€™t get high on your own supply’, it still surprised her that most reps asked for drinks that didn’t include the liquids they were supposedly selling.”
