Yesterday it was announced that Sago House in Singapore was this year’s winner of the Michter’s Art of Hospitality Award as part of Asia’s 50 Best Bars 2023.
So today, we thought we’d see what all the fuss was about and asked them to make us a cocktail.
Thankfully, Naz was happy to oblige, so we present to you the Bakwa Collins.
The drink is a light, citrusy, refreshing mix of fat-washed Bourbon, Fino Sherry, Maple Syrup, ‘fake’ Lime and Soda Water, all topped with a Lemon Cream Foam.

- 45ml Bakwa-Washed Evan Williams
- 10ml Fake lime
- 10ml Fino Sherry
- 15ml Maple Syrup
- 90ml Soda
- 30ml Lemon cream foam
Add the first five ingredients, in order, to an ice-filled Collins glass and stir to combine. Top with Lemon Cream Foam.
