Perfect for Halloween, the Undead Gentleman is a riff on the Tiki Classic, the Jet Pilot. Vibrant in both colour and flavour, this modern Tiki classic was featured in Martin Cate’s cocktail book, “Smuggler’s Cove: Exotic Cocktails, Rum, and the Cult of Tiki.”
Rinse a coupe with Absinthe Blanc. Add all other ingredients to an ice-filled shaker, then shake before double straining

Cinnamon Syrup: Put 2 cups of water in a saucepan. Add 3 halved 6-inch pieces of cinnamon sticks and bring to a boil over high heat. Add 4 cups of granulated sugar and stir with a whisk (or an immersion blender) until dissolved. The liquid should become clear , then immediately remove from the heat. Cover and let sit at room temperature for 12 hours. Strain through cheesecloth into a bowl, and then funnel liquid into a sealable bottle or container. The syrup will keep, refrigerated, for several weeks. Makes 4 cups (32 ounces).
