Created in 2014 by Márcio Silva, the Lavarello cocktail is a nice, boozy riff on the Rabo-de-Galo which swaps out the sweet vermouth for Cynar and then adds that to the Cachaça, Aperol & Chocolate Bitters.
Stir all ingredients in an ice-filled mixing glass, then strain into a rock glass with a square block of ice.
