Greg Kong, beverage director for Kimika New York describes the bar’s Watermelon Cooler as a watermelon daiquiri at heart. With Ten To One White Rum, Trois Rivieres Cuvee L’Ocean, salted Watermelon Syrup, Aperol and a hint of chilli, the drink is rounded off with a little Lambrusco Rosso sparkle.
Build in a shaking tin. Add all the ingredients except Lambrusco into a shaking tin. Whip shake with 3-5 pebbled ice. Strain into a snifter glass, add pebbled ice and top with Lambrusco.
