Although they have only been open a month, Singapore’s latest bar offering, Cat Bite Club, is creating a dedicated following for its uncommon approach to spirits and flavour.
Specialising in Agave and Rice spirits, the bar wants to help its guests fully explore these liquids that are rooted in craftsmanship and tradition, not to mention a unique terroir.
Discovering the beauty of agave spirits early in their careers, childhood friends and American bartenders Gabriel Lowe and Jesse Vida saw similar potential in historical Asian spirits when they moved East in 2018.
To show you what they mean, we are joined by Lowe as he demonstrates the bar’s hero Rice spirit cocktail, the Soju Sprint.
A mix of Soju, Amontillado Sherry, Absinthe and Peach Liqueur, the cocktail is long, flavoursome and refreshing. Yet more interestingly, this is a drink that Lowe believes will give a good introduction to what Rice Spirits can do in cocktails.

Soju Sprint
Ingredients
- 2 (6 drops) Dash Absinthe
- 20ml 2-1 Citrus
- 15ml Rich Honey Syrup
- 5ml Peach Liqueur
- 10ml Amontillado Sherry
- 45ml Tokki Black
- Top with Soda, stir large spear ice
Instructions
Shake all ingredients (except Soda) in an ice-filled shaker and whip. Strain into a highball glass and garnish with a sprig of mint.
