Created by Julia Momose at Kumiko in Chicago, The Grey Wolf is a Japanese Whisky riff on the classic Old Fashioned, with the inclusion of the savoury-sweet acidity of Plum Vinegar and the complex sweetness of Benedictine.

Ingredients

  • 2 oz. 60ml Toki Japanese Whisky
  • 0.25 oz. 8ml Demerara Syrup
  • 1/2 tsp 1/2 tsp Benedictine
  • 1/2 tsp 1/2 tsp Plum Vinegar
  • dash dash Angostura Bitters
Display: oz. ml.

Instructions

Combine all ingredients in a mixing glass over ice and stir until chilled. Strain into a rocks glass over an ice block chipped into a gumdrop shape.

Garnish

Expressed grapefruit peel (discard)
