To balance the use of Overproof Rum in his Tai Du Mai, a riff on a classic Mai Tai, Erik Hakkinen at Roquette in Seattle added Cognac instead of dark rum, as well as a little Pineapple Syrup to the usual Lime, Orgeat and Triple Sec
