Saladito

Named after the Mexican dried salted fruit, the Saladito was created by Marco Tello as a riff on Sasha Petraske’s The Business (which in turn is a riff on the Bees Kees). The trick with this drink is to shake the Mezcal, Honey Syrup and Lime Juice mix with a large ice cube, really well. This produces an almost egg white-like foam to which the cayenne pepper and sea salt can adhere.

Ingredients

  • 2 oz. 60ml Mezcal
  • 0.75 oz. 23ml Honey Syrup
  • 0.75 oz. 23ml Lime Juice

Instructions

Shake all ingredients well, with one large ice cube and strain into a chilled couple glass.
