There’s nothing as lush as velvet and in this case, Red Velvet as created by Brendon Osmers at Gerard’s in Brisbane. The strawberry & lemongrass, red currants and dry fino create a zesty, fresh body which is carried through to the bubbles by the bittersweet Elderflower Tonic

Stir all ingredients (except Tonic Water) in an ice-filled mixing glass, then strain into a highball glass with ice. Top with Tonic Water
