Subtly sweet and smoky, the Rapscallion is a deceptively simple but nicely potent cocktail. Created by Adeline Shepherd at Ruby in Copenhagen, it combines Single Malt Scotch, Pedro Ximénez Sherry, and a Pastis rinse.
Coat a chilled Nick & Nora glass with Pastis, and discard any excess. Stir Scotch and sherry in an ice-filled mixing glass, then strain inti the Pastis-rinsed glass
