If you like your citrus on the tarty side and lots of it, then a Kumquats, Lemongrass & Rum is a drink that certainly won’t disappoint. With Kumquat Juice, Kumquat-lemongrass Syrup and Rum, this drink has a perfectly balanced zing.
In a mixing glass, combine rum, kumquat-lemongrass syrup, fresh kumquat juice and ice. Shake and serve over the rocks.
Kumquat halves
Chop two stalks of lemongrass into 2 inch (5cm) pieces, then crush with a muddler to release the juice. Combine lemongrass, 2 cups water and 3/4 cup sugar in a small saucepan. Squeeze one cup of halved kumquats into the lemongrass and water, and drop the pressed kumquats into the saucepan. Bring to a boil. Lower heat, cover and simmer for about 30 minutes. Let it cool in the refrigerator. Strain.
