Based on the Rosy Deacon, a classic cocktail from the Stan Jones’ Complete Bar Guide, this drink was reimagined and rounded out by Jim Meehan at PDT in New York around 2009. With Gin, Sloe Gin & Ruby Grapefruit Juice, it is the Absinth wash that gives the drink it’s ‘green’ name.
Rinse the glass with Absinthe. Shake all ingredients with ice and fine strain into the Absinthe-coated glass.
