The Gravity Sidecar, created by Matthew Cox, is inspired by the story of Sir Isaac Newtown and incorporates apple in three ways – within the ice, the sour component and the garnish. Showcasing the beauty of the Cognac, the malic acid-adjusted Sauvignon Blanc is balanced by the Cointreau and Elderflower Cordial to create a versatile and complex drink.

Ingredients

  • 1.69 oz. 51ml Cognac (Remy Martin 1738)
  • 0.85 oz. 26ml Sauvignon Blanc (Malic Acid-Adjusted)
  • 0.68 oz. 20ml Cointreau
  • 0.34 oz. 10ml Elderflower Cordial

Instructions

Add Remy Martin 1738, Cointreau, Acid-Adjusted Sauvignon Blanc, and Elderflower Cordial to a shaker. Fill with quality ice and shake. Double strain into the prepared rocks glass with an apple ice volcano.

Garnish

Apple and Absinthe caviar over salted tuile with an edible flower.
