Cotogna's Aperol Fizz

If you’ve ever wondered about what a creamier spin on the Aperol Spritz would be like, then Cotagna’s Aperol Fizz is well worth a try. With Aperol, Lemon Juice, Sugar Syrup, Egg White and Soda Water, this frothy twist was created by Jason “Buffalo” LoGrasso of Cotogna in San Francisco.


  • 4 oz. 120ml Aperol
  • 2 oz. 60ml Lemon Juice
  • 1 oz. 30ml Sugar Syrup
  • 1 1 Egg White
  • top top Soda Water

We Recommend


Add Aperol, Lemon Juice, Sugar Syrup, and Egg White to a cocktail shaker. Shake vigorously without ice for 15 seconds to emulsify the egg white. Add ice and shake until very cold, about 15 seconds. Strain into two small juice glasses.
