A delightful riff on a Margarita, Cóctel Al Pastor (which means “shepherd style” in Spanish) is adapted using spices and herbs to create a cocktail that is balenced but with a little bit of a bite.

“Vanessa strongly believed that the best bar in the world always has to be the one you’re sitting in right now. But that belief, of course, did not create award shows … so she, like so many, had come to Singapore to see the offical results. While the event itself was always fun, Vanessa found the best part of flying 9,526 miles was catching up on gossip.”

Ingredients

  • 2 oz. 60ml Ilegal Mezcal Joven
  • 1 oz. 30ml Achiote-infused Pineapple Juice (see below)
  • 1 oz. 30ml Lime Juice
  • 0.5 oz. 15ml Agave Syrup
Display: oz. ml.

Instructions

Shake all ingredients in an ice-filled shaker, then strain into a glass rimmed with tortilla salt

Garnish

Pineapple fronds


Tortilla Salt – Add 1 cup of unsalted corn nuts to a blender and blend until the corn nuts are the consistency of course sea salt. Then mix into 5 cups of salt.

Achiote-infused Pineapple Juice – Add 3.5 oz vegan Achiote paste to 1 qt pineapple juice, and stir until dissolved. If Achiote is unavailable, alternatives can be Harissa paste or Paprika paste.
