Playing with Mezcal’s savoury and salty side, Apium is a Margarita riff from the book Mezcal by Emma Janzen. The savoury notes of celery bitters add to the smoke of the Mezcal for a tantalisingly seasonal take on the original.

Although she was familiar with the expression, ‘don’t get high on your own supply’, it still surprised her that most reps asked for drinks that didn’t include the liquids they were supposedly selling.”

Ingredients

  • 1.5 oz. 45ml Del Maguey Mezcal
  • 1 oz. 30ml Lime Juice
  • 0.75 oz. 23ml Simple Syrup
  • 4 dash 4 dash Celery Bitters
Display: oz. ml.

Instructions

Shake all ingredients in an ice-filled shaker, then strain into an ice-filled rocks glass

Garnish

Celery salt rim & lime wheel
