Created by Tony Roehr at Noble Experiment in San Diego, the Cobble Stone Highball creates a perfect flavour match with the richness of Amaro and the salinity of Sherry, as well as a little muddled cucumber, all topped with a good dose of bubbly.

Instructions
Muddle the cucumber slices in the base of a shaker, then add the remaining ingredients, except the Champagne. Shake with ice, then strain into an ice-filled Collins glass. Top with Champagne
