Created in the 1940s at the Connaught Bar, and mixes Aperol, a little Elderflower Liqueur and Champagne for a dry, bubbly drink with floral and citrus notes. But who is Betty? She can be anyone or anything you want …
Stir all ingredients, except the Champagne, in an ice-filled mixing glass. Strain into a flute and gently pour in the Champagne.
