A riff on a Sidecar, The Disco Waldo, created by Alex da Fonseca from The Blockman in Johannesburg, takes inspiration from the colours and flavours found in the disco era of cocktails. The tropical fruit notes in the Cape Vintage Port plays beautifully with the citrus of the Cointeau and the plum and fig notes of the Cognac.

Ingredients

  • 1.69 oz. 51ml Cognac (Remy Martin 1738)
  • 0.68 oz. 20ml Cointreau
  • 0.68 oz. 20ml Cape Vintage Port (Coconut & chocolate infused)
  • 1.35 oz. 41ml Lemon Juice

Instructions

Apply masking tape to the glass in straight lines about a finger width apart. Coat the glass in a thin layer of sugar syrup, then dust liberally with raspberry powder.
Add all liquid ingredients to shakers with ice. Shake then fine strain into the glass
