When you think of sipping tropical cocktails, you often connect it with island life. But what if your island isn’t in the tropics?
This is the situation that guests who visit Kiki’s Lounge on the Isle Of Man find themselves in, and they love it!
Today, we join Drew Flemming in a not-so-tropical location for a tropical cocktail called Ernest & Rita.
As the name suggests, the Ernest & Rita is a drink that sits between a Daiquiri and a Margarita, with Tequila, a touch of Mezcal, Elderflower Liqueur, Campari, Pink Grapefruit ‘superjuice’ and Simple Syrup.
And it really shows that you don’t need hot temperatures to either make and appreciate this tropical island concoction.

Ernest & Rita
Ingredients
- 35mls (1.18oz) Olmeca Altos Blanco tequila
- 7.5mls (0.25oz) Del Maguey Puebla Mezcal
- 15mls (0.5oz) Elderflower Liqueur
- 5mls (0.16) Campari
- 25mls (0.85oz) Pink Grapefruit ‘Super Juice’
- 10mls (0.330z) 2:1 Simple Syrup
Instructions
Shake all ingredients in an ice-filled shaker, then double strain into a Nick & Nora glass
Pink Grapefruit ‘Super Juice’ – Combine 100g of Pink Grapefruit peels, 80g Citric Acid, 20g Malic acid and 3.3g MSG in a jar and let macerate for 3-4 hours. Then add 1660mls of water and blend vigorously in a blender or thermomix, for 60 seconds. Strain the mixture through a chinois or fine strainer before bottling and labelling
