Moving away from heavy tropical drinks, Juyoung Kang at the Fontainebleau Las Vegas created The 9th Island, a light, bright, tropical Mezcal Highball that’s easy to drink. It has hints of roasted agave, pineapple, and spice, all softened by coconut water.
Shake all ingredients in an ice-filled shaker, then strain into the matcha-prepared ice-filled glass
Rim a Collins glass with the matcha salt
Matcha Salt – Mix 1 Tbsp. of sea salt with a 1/2 tsp. of matcha powder.
