If you want a savoury, non-alc cocktail with fresh garden notes, Austen bartender Caer Maiko would recommend using Snap Peas. In Tendril Loving Care, she uses a Snap Pea Shrub, which she mixes in with Seedlip Garden and Lime Juice for the perfect refreshing highball. Note – if you want to add a bit of alcohol to this, replace the Seeplip with an ounce of Gin and half an ounce of Blanco Tequila.

Ingredients

1.5 oz. 45ml Seedlip Garden
0.75 oz. 23ml Snap Pea Shrub
0.25 oz. 8ml Lime Juice
3 oz. 90ml Club Soda (Soda Water)

Instructions

Shake all ingredients, except the soda water, in an ice-filled shaker tin, then strain into an ice-filled Collins glass

Snap Pea Shrub: Blend 100g sneap peas, 15g mint leaves and 225g white distilled vinegar in a blender, then strain. Add 630 g white sugar and blend again.
