Created by Anthony Mylott at Margo’s in Santa Monica, California, the Mezcal Avocado Margarita is a riff that offers a creamy texture from the avocado and a good dose of Mezcal.
“While Vanessa found making Margarita riffs all night made her happy, she quickly realised she had forgotten how truly difficult people could be. While she was used to certain guests making passes, she never saw the point in them loudly declaring their drinks should be comped because they ‘know’ the owner.”
Shake the avocado and ice (to break down the avocado), then add Mezcal, Agave & Lime Juice and shake until chilled. Strain into an ice-filled rocks glass
Chile Salt: Add 2 parts of kosher salt to 1 part Aleppo pepper and a dash of cayenne
