Created by Simon Difford at the Cabinet Room in London in 2017, the Mexican in Manhattan swaps nearly everything out but is still a riff on the classic Manhattan. The Rye is replaced with Añejo Tequila, the Sweet Vermouth for Bianco Vermouth, the Angostura Bitters for Lavender Bitters and then a touch of Maraschino Liqueur is added for a little sweetness.
Stir all ingredients in an ice-filled mixing glass, then strain into a chilled glass
