Ideal for summers spent around the pool, this riff on the Tiki tropical classic is what refreshment is all about. Wonderfully Spritz-ified, this version of a Mai Tai pares down the Rum content in lieu of a Prosecco topper.
Combine the Lime Juice, Orgeat, Curaçao, and Rum in a small container and refrigerate for an hour or two. Pour the chilled mixture into a Collins glass, fill to the rim with ice, top with Champagne.
