A perfect example of how even the slightest change of ingredient can completely alter the flavour of a drink, Last Rites swaps out ordinary Orgeat for Cashew Orgeat, which makes this Mai Tai riff an extra rich take on the classic.

Ingredients

  • 1 oz. 30ml Martinique Rhum
  • 1 oz. 30ml Jamaican Rum
  • 0.75 oz. 23ml Lime Juice
  • 0.5 oz. 15ml Dry Curaçao
  • 0.5 oz. 15ml Toasted Cashew Orgeat
Display: oz. ml.

Instructions

Shake all ingredients together in a shaker with a scoop of cubed ice and a scoop of crushed ice. Pour the contents into a double Old Fashioned glass and garnish.

Toasted Cashew Orgeat – Toast ¼ lb. of cashews until golden brown. Chop the nuts, then add them to 1 cup of simple syrup (1:1). Let the mixture steep overnight and strain the nuts before using. Store in the refrigerator for up to 2 weeks.
