If you believe, as we do, that nothing beats a slightly spicy fizz cocktail, then In My Peel needs to be on your list of drinks to make. Created by Kelsey Ramage of Trash Collective, this drink features carrot peel-infused Vodka, spiced syrup, Amaro Lucano, Greek yogurt and Soda Water
Make carrot peel vodka and spiced syrup. Add everything except soda into a cocktail tin with crushed ice. Give a quick hard shake. Pour everything into a Collins glass and top with soda.
Curly Carrot peels (place carrot peels in ice-cold water for 10 min – they will curl).
Carrot Peel Vodka
Ingredients:
Instructions: Weigh out the ingredients and put in a glass jar. Keep covered in a warm jar for a minimum of 4 hours to a maximum of 30 hours. Strain and keep in fridge.
Instructions: Toast all WHOLE spices until oils are released (until fragrant). Cover with water and bring to a boil. Add sugar, stir, and cover. Bring to a simmer, take off heat and let sit until it reaches room temperature. Strain and refrigerate.
