Created by bartender Joaquín Simó at former East Village bar Pouring Ribbons, the refreshing High King Highball is a bright fruity highball that is not only visually appealing but also a delicious drink that easily converts anyone who believes that Irish Whiskey shouldn’t be in a cocktail

Ingredients

  • 2 oz. 60ml Bushmills Irish Whiskey
  • 0.5 oz. 15ml Aperol
  • 0.75 oz. 23ml Lemon Juice
  • 0.75 oz. 23ml Grapefruit Juice
  • 0.5 oz. 15ml Simple Syrup
  • 3 3 Raspberries
  • dash dash Peychard's Bitters
  • top top Soda Water
Display: oz. ml.

Instructions

In a cocktail shaker, muddle the Raspberries and Simple Syrup. Add the Irish Whiskey, Aperol, Lemon Juice, Grapefruit Juice and Bitters into the shaker with ice, and shake until well-chilled. Fine-strain into a Collins glass over fresh ice and top with the Soda Water.
