Audrey Saunders created the French Pearl in 2006 at the Pegu Club NYC as a tribute to 19th-century Parisian architecture. It mixes notes of anise, botanicals, lime, and mint for a drink that is both fresh and complex.

Instructions

Add Lime Juice, Simple Syrup and Mint to a shaker tin and muddle. Add the Gin, pastis and ice and shake, then fine strain into a chilled coupe
