Meaning “daisy” in Japanese, Deijī is WSET-certified sake educator Shaun Williams’ take on a Margarita made with Japanese Gin and Sake in place of Tequila. As well as the addition of homemade Yuzu Curaçao, Williams adds the tang of a salt rim with a homemade shio solution he also adds to the drink.
Shake all ingredients in an ice-filled shaker, then strain into a large coupe

Yuzu Curaçao – Mix 1 cup Vodka, 1 cup Yuzu Juice, 8 Cloves and 2 Cinnamon sticks in a nonreactive container. Refrigerate for 48 hours, shaking daily. After 48 hours, bring 1 cup of Water to a boil, then mix in 1.5 pounds Sugar. Allow the mixture to cool completely.
Blend the syrup with the yuzu-vodka mixture and refrigerate for an additional 3 days before using. Keeps, refrigerated, for 3 weeks.
Shio Solution – Blend 1/4 cup liquid shio koji, such as Hanamaruki brand and 1/4 cup water and store in a bitters bottle.
