When you go to a tropical resort, you expect to be served a Pina Colada or a Daiquiri, but Bosque Bar in Costa Rica is looking to offer the unexpected as part of its tropical bar menu.
Located at the Tabacon Thermal Resort & Spa, Bosque and its mixologist Josue Guzman are looking to blend internal techniques and local culture and flavours into their creations. Sure, they can, of course, make you the typical tropical drink, but after tasting a cocktail like their Rum Fat Wash, we assume you won’t want them.
Using a base of Costa Rican Rum, which is fat-washed with cheese (a mixture of blue cheese and a local white cheese called Turrialba), the drink also mixes Honey, Ginger and Lime Juices, which are all then topped with a dash of Prosecco.

Rum Fat Wash Cocktail
Ingredients
- 2 oz Rum fat wash infusion (recipe below)
- 0.75 oz honey
- 0.5oz Ginger
- 0.24oz lime juice
- Top with prosecco
Instructions
Shake all the ingredients together except the prosecco in an ice-filled shaker, then strain into a chilled Collins glass with ice. Top with Prosecco
Garnish – square of Turrialba cheese
Rum fat wash infusion: Place 60g Turrialba cheese, 30g Blue cheese and 1 L Centenario Rum 5 years in a container and refrigerate for 3 days. Strain and store in a bottle.
