As part of the Bacardi sponsored YCK Festival, Sydney bar Swinging Cat has created a new drink that is a riff on a Ramos Gin Fizz called Pink & Fluffy.
With Bombay Bramble, Lemon Juice, Cherry Syrup, Cream, Egg White and a lot of shaking, this drink is a citrusy, berry variation on the original.
We talk to Ross Appleby, General Manager at Swinging Cat about the drink, the festival and the appeal of pink
Pink & Fluffy
Ingredients
50mls Bombay Bramble
25mls Lemon Juice
20ml Cherry Syrup
30ml cream
30ml Egg White
Drop of Rose Water
Instructions
Add all ingredients to an ice-filled shake. Pour a little Soda Water into the base of a highball glass. Do a long shake for several minutes, then strain into the glass. Wait a minute or two, then add a little more soda water to the glass to create a souffle-like head
