Fascinated by how trees and plants communicate, Jeff Savage, Head Bartender at the Botanist in Vancouver, has created A Council Of Trees.

Designed to showcase that Scotch cocktails do not need to be heavy, A Council of Tree utilises earthy and woody notes in a light, refreshing highball-style drink.

Savage describes the drink as reminiscent of walking through a forest when it is raining.
