With Lecce Cocktail Week in full swing, we were fortunate to be able to catch up with one of the newer bars in the city, Folia.
Combining flavour with sustainability, the bar describes itself as a ‘culinary eco-oasis in the historic centre of Lecce’.
We catch up with Federico D’Agati as he shows us how to make the bar’s Signature cocktail for the week, Eufolia.
With Gin, Chardonnay and Strawberry Yogurt Soda, this refreshing drink is perfect to beat the heat of summer.

Ingredients
- 45mls (1.5oz) Sapling Gin
- 5mls (0.18oz) Chardonnay
- top with Strawberry Yogurt Soda
Instructions
Add the Gin and Chardonnay to a chilled glass with ice, then top with Strawberry Yogurt Soda
Garnish – rim the glass with yoghurt powder (amazon) or icing sugar
Strawberry Yogurt Soda -Add equal parts yoghurt and water and a little Lemon Juice, then pass through a coffee filter. Once filtered, carbonate.
