Brooklyn Whiskey distillery Widow Jane has announced the release of 2020 ‘The Vaults’, as the follow up to the brand’s successful debut expression last year.
The Vaults collection is intended to share a wide intensity of flavours from selected old bourbons finished in the most fascinating and original woods. The 2020 edition is a blend of 15-17-year-old bourbons, which blender Lisa Wicker and her team finished in rare casks raised from five-year air-seasoned Appalachian oak.
The cask finish imparts rich and deep flavours and allows the discerning drinker to discover hints of dark sugar and unsweetened vanilla. Extended air seasoning is a technique that virtually eliminates tannins and greenness in the wood staves yielding a mellow flavour profile influenced by the passing seasons that is impossible to replicate.
Complex and rich, this long-aged bourbon delivers a nose of cream soda, hickory syrup, lemon peel, and light, sweet pipe tobacco, over a palate of caramelized barley malt, earl grey tea, sassafras, and slight menthol touches. It finishes with long-lingering dry red wine and further notes of unsweetened vanilla, nutmeg, seasoned oak and barrel char.
