Boat House Punch

Citrusy and bubbly, the Boat House Punch is the perfect batch cocktail, as it has enough fruity, floral and bittersweet notes to be flavoursome but not clawing. Created by Julie Reiner, it starts with a really simple Lemon Oleo Saccharum before mixing in Gin, Aperol, St-Germain and a range of fresh juices.

Ingredients

  • 33.81 oz. 1014ml Gin
  • 25.36 oz. 761ml Aperol
  • 12 oz. 360ml St Germain
  • 12 oz. 360ml Grapefruit Juice
  • 12 oz. 360ml Lemon Juice
  • 12 oz. 360ml Orange Juice
  • 4 Lemons 4 Lemons Lemon Peel
  • 1/2 cup 1/2 cup Superfine Sugar
  • 25.36 oz. 761ml Sparkling Rosé

Instructions

Muddle the lemon peels (save lemons for juicing) with the sugar in a bowl until the sugar looks slightly moistened. Cover and let sit for at least one hour, or overnight, so the sugar can absorb the lemon oils. Add the Gin, Aperol, St-Germain, Grapefruit Juice, Lemon Juice and Orange Juice to a large pitcher or punch bowl. Add the lemon-sugar mixture, and let sit for 15 minutes. Remove the lemon peels, drop in a large ice block, and add the Sparkling Rosé.
