Moving away from heavy tropical drinks, Juyoung Kang at the Fontainebleau Las Vegas created The 9th Island, a light, bright, tropical Mezcal Highball that’s easy to drink. It has hints of roasted agave, pineapple, and spice, all softened by coconut water.

Ingredients

  • 1.5 oz. 45ml Coconut Water
  • 1 oz. 30ml Del Maguey Vida Mezcal
  • 0.75 oz. 23ml Pineapple Liqueur
  • 0.75 oz. 23ml Lime Juice
  • 0.25 oz. 8ml Allspice Dram
  • 0.25 oz. 8ml Agave Syrup
Display: oz. ml.

Instructions

Shake all ingredients in an ice-filled shaker, then strain into the matcha-prepared ice-filled glass

Garnish

Rim a Collins glass with the matcha salt

Matcha Salt – Mix 1 Tbsp. of sea salt with a 1/2 tsp. of matcha powder.
