One of the few cocktails to survive from the ‘dark days’ of the 70’s and 80’s, the Piña Colada is considered by many as a tropical vacation in a glass.
Creamy, sweet, juicy and boozy, the name translates to an ingredient in the drink. Piña means pineapple, and colada means strained. So in Spanish, Piña Colada translates to strained pineapple.
Hailing from San Juan, Puerto Rico, the drink is believed to have been created in 1954 by bartender Ramón “Monchito” Marrero at the Caribe Hilton.
In 1978, the Piña Colada was declared the official drink of Puerto Rico.
Transforming the drink into popsicle form is incredibly simple to do and makes the perfect summer treat for adults (or hold the rum to make them kid-friendly)
Pina Colada Popsicles
Ingredients
- 0.5oz rum
- 8oz Cream Of Coconut
- 8oz cubed fresh pineapple
- 2oz granulated sugar
- 0.25oz fresh lime juice
- 1/2 teaspoon kosher salt
Instructions
In a blender, combine all ingredients and process until very smooth (about 30 seconds). Divide mixture evenly between popsicle molds and freeze until solid (at least 4 hours), then unmold. After unmolding, each popsicle can be tightly wrapped in plastic and kept frozen for up to 4 weeks.
