Global Rum brand Plantation will release the latest limited edition from the ‘Under the Sea’ Vintage Collection No.2: Guyana 2007. Following Panama, Jamaica and Fiji, Guyana is the fourth edition of the ‘Under the Sea’ collection which celebrates marine animals native to the great terroirs of rum.
Guyana 2007 results from one-week fermentations distilled in three historic stills: the Port Mourant double wooden pot still, the French Savalle four-column metal still and the Enmore Wooden Coffey still. Further depth is added through the double ageing process, a signature of Plantation Rum.
Following its initial 13-year ageing stint in ex-Bourbon casks, the rum then made a long sea voyage to France, where it was further aged for two years in Javrezac, in the Southwest of France, in 350-litre French oak casks.
Rich and intense on the nose, with pastry notes of cocoa, almond and cooked banana, before becoming spicier, with allspice and charred oak. The palate opens with orange, caramel and tobacco, leading to balsamic and almost smokey notes, before ending with a very long, spicy finish with pepper, nutmeg and chocolate.
Guyana 2007 (51%, 700ml) is available from Master of Malt
