Katie Renshaw from the French Vermouth brand Noilly Prat makes us a few Vermouth cocktails and talks about the liquid’s resurgence

Vermouth is genuinely having a moment. Spurred on by the low-ABV and Aperitivo cultures, this aromatized and fortified wine is catapulting itself into professional and home bartenders’ hearts and glasses.


Equally at home in innovative cocktails and the classics, Vermouth saw a staggering 20.5% rise in 2021 (compared to the previous year) and is expected to rise further by 7.3% in the US market alone by 2027 (estimated at $5.1 billion globally).

Instructions

  • 1.5 oz Noilly Prat Extra Dry
  • 0.75 oz St~Germain Elderflower Liqueur
  • 0.5 oz lemon juice
  • 0.25 oz simple syrup
  • 1 dash absinthe
  • 2 oz pear cider

Instructions

Short shake, strain into glass with ice, and top with cider

Garnish: Nutmeg and pear slices

Ingredients

  • 1.5 oz Noilly Prat Extra Dry Vermouth
  • 1.5 oz Bombay Sapphire Gin

Instructions

Add both ingredients to an ice-filled mixing glass and stir until adequately chilled and diluted. Strain into a frozen martini glass

Garnish: zest of fresh lemon.
