DIY Spiced Honey Syrup

In case you hadn’t guessed, Bees Knees Week & National Honey Month adds up to Honey Syrup in cocktail terms, and what better way to up the flavour than with a little spice.

As this is National Honey Month (and Bees Knees Week as well), we couldn’t let the opportunity of making a Honey Syrup pass us by. But, by way of celebration, we didn’t want to do just throw together any sort of Honey Syrup, we wanted to make one with a bit of a twist.

To our mind, nothing gives a richer or bolder flavour than the addition of spices. The flavour and aroma of Honey Syrup can be easily transformed from simply a sweetening agent into a world of vibrancy that highlights the flavour of the honey itself.


When making a spiced honey syrup you can use one particular spice to use or a mixture of spices that could include Cinnamon, Nutmeg, Star Anise, Black Peppercorn and Cardamom

Spiced Honey Syrup

Ingredients

¼ cup whole spices
1 cup water
½ cup honey

Instructions

Crush the spices with a mallet or spatula. Add the water and spices to a small saucepan. Bring to a gentle boil, then reduce heat and simmer slowly until the water evaporates to ½ cup. Remove from heat, add honey, and stir until dissolved. Cool the mixture until room temperature. Strain the syrup through a fine cheesecloth and a sieve to remove all the spices. Store in refrigerator.
